The "May"kin Spice

A twist on pumpkin pie, the “May”kin is a pumpkin cheesecake seasoned with all the warm spices of fall. It is baked on a gingersnap crust drizzled in made from scratch caramel sauce, and topped with the same caramel sauce. The finishing touches are fresh pumpkin spice whipped cream, and made from scratch, soft ginger snaps. The “May”kin is sure to have you reminiscing of cherished, family, holiday gatherings.

The “May”kin Spice is named after my sweet baby girl. I first made this cheesecake for my daughter for her birthday, which got the cheesecake craze started. With  hints of cinnamon, nutmeg, ginger and clove, The “May”kin Spice has quickly become a fall favorite.
